Dinner a la moi!
We have been super lucky to have Rich’s stepmama making us delish dinner for about a week now.
She rocks in the cooking department.
We wanted to giver her a break and make something delish for her and papa Barnes.
We made Rich’s almost famous grilled chicken.
Almost meaning my five readers now know it exists.
Balsamic roasted brocoli and cauliflower.
I was dying for some sweet potatoes but for some reason Long Island does not believe in stocking regular sweet potato.
Rich convinced me to use Japanese sweet potatoes.
I bought some boxed bulgar and garlic just in case this was an epic food failure.
Fortunately they did turn out awesome.
I mean when you use maple syrup and brown sugar how bad could something be?
Maple roasted sweet potatoes
2 sweet potatoes, peeled and diced
1/3 cup pure maple syrup
2 tablespoons butter, melted
1 tablespoon lemon juice
1/2 teaspoon salt
a sprinkle of brown sugar (just in case)
Preheat over to 400
1. Arrange sweet potatoes in a baking dish.
2. Combine maple syrup, butter, lemon juice and salt in a separate bowl.
3. Pour over the top of sweet potatoes. Toss to coat. Sprinkle with brown sugar.
4. Cover and bake for 45 minutes. Stirring every 15.
We now have 110 save the dates to label and mail out.
I sense a vodka spritzer in my future.
