For whatever reason, I had no interest in your everyday chicken parmesan.
I wanted to complicate life and make Rich wait longer for dinner.
Viola! Chicken parm bake.
Chicken Parm Bake
3 boneless, skinless chicken breasts, cubed
2 cups italian panko
1 box whole wheat rontini
1 jar pasta sauce
1 cup chopped spinach
1 cup Italian blend cheese
1. Pre heat oven to 350. After dredging the chicken cubes in the egg, place in bag with panko crumbs and shake it to coat.
2. Cook noodles according to package directions. Add chicken to greased 13 x 9 baking pan. Pre-bake chicken for 20 minutes.
3. Remove chicken from oven, add cooked noodles, spinach, pasta sauce, and mix to coat chicken and noodles with sauce. Add cheese to the top and bake for another 10- 15 minutes or until cheese is melty.
I served ours on top of a bed of roasted broccoli.
