It’s beginning to look a little bit like Christmas.
We got some decorating done and
hopefully we will get a big ole tree tomorrow.
While Rich was being Martha Stewart I was being a happy homemaker and cookin’ up some sloppy joes.
And boy were they sloppppppp-e!
1 1/2 lbs ground turkey
3 cloves minced garlic
1 medium onion- diced
1 can tomato sauce
1 28 oz can crushed tomatoes
1 bag frozen corn
1 can kidney beans – drained and rinsed
1 jalapeno – seeded and diced
2 tablespoons chili powder
2 tablespoons paprike
1 tablespoon cumin
3 tablespoons chipotle hot sauce (or chipotle seasoning)
1. Heat olive oil in a large pan, adding onion and garlic. Sweat the onions for about 5 minutes.
2. Add turkey, breaking with a spoon and browning.
3. After turkey is browned add all other ingredients, and allow to simmer for about an hour.
We used Chicago hard rolls,
and hollowed out the bottom to help hold all the yummy goodness in.
There was also some Jalapeno cheddar to spice things up.
Don’t be afraid to get sloppy because these were delish!
