Philly Cheese Steak Sloppy Joes

This weekend was a blur.

I officially have a stress fracture. So no running for me.

We looked at 8 million more homes- The good news being we think we have narrowed it down to 4 million.

And I pretended to do laundry but really read like 8 Nora Roberts bodice rippers.

Today was a little bit better because I finally made this yummy treat.

Look at all that cheesy goodness!

 Philly Cheese Steak Sloppy Joes

Adapted from The Lady with the Red Rocker

1 tbsp olive oil

1lb lean ground beef (Rich almost shat himself when he saw real beef in our home)

1 whole onion chopped

1 green pepper chopped

1 cup beef broth

1/4 cup steak sauce (we used garlic and herb flavored)

S&P to taste

Cheese sauce

1 tablespoon butter

1 tablespoon flour

1 cup milk

1 cup shredded Pepper Jack cheese

rolls of some kind (we used french bread)

1. In a large skillet heat olive oil and add beef. Cook for about 5 minutes or until browned. While meat cooks, melt butter in a sauce pan, add flour and whisk in milk. Stir in pepper jack and allow mixture to thicken.

2. Add in peppers, onions, and cook until soft, cooking for another 5 minutes.

3. Add broth, steak sauce, season and cook until bubbling. Reduce to a simmer and let cook another 5-10 minutes. Toast the roll, bun, or whatever carb you use to get this in your tummy.

4. Top carb with meat mixture, pour cheese over the top and sandwich it up.

** I left the cheese mix on the burner because I have no patience and it just worked better that way.**
