Another Mexican Pizza

 We made a mexican pizza a long time ago.

It was yummy.

 This one  is yummier.

 Another Mexican Pizza

inspired by Pioneer Woman

4 boneless skinless chicken breasts

1/2 cup salsa

1 package taco seasoning

1. Throw first three ingredients, reserving about 1/2 the packet of taco seasoning, in a crock pot and cook for about 3 hours- shredding chicken with about 45 minutes left.

1 tube refrigerated pizza dough

1 can black beans – drained and rinsed

1/2 cup Pepper Jack cheese

1/2 cup Sharp cheddar cheese

1 cup tomato-diced

1 cup spinach- shredded

1/2 cup greek yogurt (or sour cream but I think that is yuck)

1 teaspoon chipotle Tabasco sauce

1. Preheat oven to 400 degrees. In a bowl, combine black beans and taco seasoning. Mush with a potato masher.

2.  Spread pizza dough on pizza stone.  Top with bean mixture, spreading evenly to the crust.

3. Add meat and cheese and cook for 6 minutes. Add tomato and spinach and cook for another 7 minutes or until crust is crisp.

4. In a bowl, combine greek yogurt and hot sauce, mixing. Put mixture in a plastic bag, snipping a little hole in the bottom and drizzling over pizza when cooked.

Spinach and Artichoke Pasta

I have seen this recipe on Pinterest like 8 million times.

I always mean to pin it but get distracted but something…

usually another ceramic owl.

But I finally put a pin on it today.

And luckily we had most of the ingredients that it called for.

Spinach and Artichoke Pasta

1 box whole wheat pasta (I used shells)

1 tbsp olive oil

1 can artichoke hearts

2 cups fresh spinach

1 cup chopped rapine (I had to get rid of it)

1 cup chopped onion

3 cloves of garlic-minced

1 cup ricotta (she used sour cream but I have issues with sour cream)

3 wedges of laughing cow garlic and herb cheese

1 cup six cheese Italian blend

1 cup mozzarella cheese

S&P

1/2 tbsp chili powder

1/4 cup cooked pasta water

1. Boil pasta according to package directions. In a skillet, add olive oil, onions, and cook for 5 to 8 minutes or until soft. Add garlic and cook for another minute.

2. Add rapine, and spinach to onion mixture and cook for 2 minutes.

3. In a bowl, add ricotta, wedges, artichokes, spinach/onion mixture, and mix. When noodles are cooked, reserve 1/4 cup water, drain noodles and add to mixture. Add 1 cup of six cheese blend, and 1/2 cup mozzarella cheese, mix well.

4. Add mixture to a greased casserole dish, top with leftover mozzarella, and because I can, some Pepper Jack cheese.

5. Bake at 425 for 15 minutes.

 

I had to exchange some of the ingredients. But it still came out very yum.

On her blog she said it was a little bland, so I used the pepper jack to help spice it up a little bit.

Earth Day!

Things I should have done today:

1. Laundry- it’s Earth day…I was conserving water.

2. School work- I like to pretend I know what I am teaching during the week.

3. Clean…well anything in the house.

4. Watch the Yankee- Sox game- but those pansies had a “rain” delay…geez

What I actually did:

1. Spent about 5 hours looking at home decor on pinterest – even though we cannot move until December but it never hurts to be prepared.

2. Ate chicken dip- while being on pinterest.

3. Attempted to watch Yankees classic from July 1st- Jeter makes a catch into the stands. I already knew the outcome so it was kinda boring.

4. Made Earth Day cupcakes!

Big News

We have a BIG announcement!!!!!

Ok not such a secret announcement…..

We bought a house!!!

Maybe you thought we had a different announcement…

You obviously have not seen all the adult root beer floats I have consumed.

 Well maybe having a baby would be quicker then building this house….

Friday Night Fun

This week was a lot of fun.

 We made lots of yummy dishes like this, this, and this.

Woo hoo weekend leftovers.

 Studied insects and my classroom kiddos made these delicious creations.

 

Packing up was tons of fun on a sugar high.We also found out the rainbow twizzlers….are no good.

Had a couple of adult root beer floats.

 And participated in Friday Pizza night.

White Pizza 

1 tube refrigerated pizza dough

3 links spicy turkey sausage

1 cup ricotta cheese (about 8 ounces)

2 cups six cheese italian blend

1 tbsp red pepper flakes

2 cups spinach

S&P to taste

1. Preheat oven to 400. Brown sausage into crumbles. Spread pizza dough on to a baking sheet or pizza stone. Spray dough with with olive oil cooking spray. Top with spinach.

2. In a bowl, mix together cheeses, adding red pepper flakes and S&P. Spread mixture over the top of spinach. Top with sausage.

4. Bake for 15 to 18 minutes.

Pepper Jack Chicken

While I am not sure I am suppose to – I was so happy to get a short run in this afternoon. I was a light jog and my foot felt good the whole way so maybe the second doctor was right about lack of arch support.

Tomorrow I will use my gym membership and ride a bike just to see if alternating cardio activities will help.

Pepper Jack Crusted Chicken

2 boneless chicken breasts

1/2 cup whole wheat crackers (about 10 crushed)

1/3 cup shredded pepper jack cheese

1/4 cup panko bread crumbs

1 egg

1 tbsp oil

1. Combine crackers, cheese, and bread crumbs in a food processor and pulse, put in small bowl. Put egg in own bowl and beat. Dip chicken in egg mixture and then dredge in crumb mixture.

2. In a skillet, place about 1 tbsp oil and heat to medium-high. Add chicken, cooking for about 5 minutes on each side.

3. Once cooked, top with an extra pinch of pepper jack and let melt.

Tomorrow is the last day until the weekend!

Chicken Meatball Pasta

Chicken Meatball 

I originally saw this recipe on Dashing Dish as a yummy hamburger

1 lb ground chicken

1/2 pack of Spicy Ranch dry dressing packet

1/4 cup salsa

1/4 cup chopped spinach

1/4 cup Pepper Jack Cheese

Olive Oil Sauce

1/2 cup olive oil

3 cloves garlic

1 teaspoon red pepper flakes

2 tbsp pasta water

1 tbsp butter

S&P

1. In a bowl mix (with your hands) chicken, ranch packet, salsa, spinach and cheese. Form into small meatball sized balls, place on foil lined cookie sheet and bake at 425 for 20 minutes- turning about halfway through.

2. While meatballs are cooking cook pasta according to directions, remembering to reserve 2 tablespoons of cooked pasta water for olive oil sauce.

3. In a skillet heat olive oil, and garlic until garlic is browned. Add red pepper flakes, S&P and pasta water. When pasta is cooked add to sauce with meatballs and toss. ** I added some spinach by putting the spinach in a colander and draining pasta over the top.
