Earth Day!

Things I should have done today:

1. Laundry- it’s Earth day…I was conserving water.

2. School work- I like to pretend I know what I am teaching during the week.

3. Clean…well anything in the house.

4. Watch the Yankee- Sox game- but those pansies had a “rain” delay…geez

What I actually did:

1. Spent about 5 hours looking at home decor on pinterest – even though we cannot move until December but it never hurts to be prepared.

2. Ate chicken dip- while being on pinterest.

3. Attempted to watch Yankees classic from July 1st- Jeter makes a catch into the stands. I already knew the outcome so it was kinda boring.

4. Made Earth Day cupcakes!

I got the idea here.

Big News

We have a BIG announcement!!!!!

Ok not such a secret announcement…..

We bought a house!!!

Maybe you thought we had a different announcement…

You obviously have not seen all the adult root beer floats I have consumed.

 Well maybe having a baby would be quicker then building this house….

Easter Sunday

She has risen!

That is right I am a C and E blogger.

 

We had a very fabulous Easter weekend.

We exchanged Easter baskets and ate a yummy breakfast with my brother.

 

Breakfast Pizza

Screwmosa or a modriver which every you prefer.

 

French Toast Casserole ala Paula Dean

The rest of our family is north so we were unable to bless them with our presence.

I hope everyone has wonderful day!

Breakfast Pizza 

1 tube Refrigerated Pizza dough (or homemade dough)

1 lb rolled hot breakfast sausage

I can Rotel canned tomatoes (we used the habanero kind)

1 1/2 cups mozzarella

1 1/2 cups sharp cheddar

4 eggs

6 strips of cooked bacon

S & P

* you can always add peppers, onions, mushrooms*

Preheat oven to 350

1. Spread dough in a 13 x 9 baking dish, making sure that dough evenly covers and raises about 2 inches on the sides.

2. Brown sausage, drain and add to dough with the tomatoes, and top with 1 cup each of mozz and cheddar. Bake for about 10 minutes.

3. Beat eggs, add S & P and spread on top of sausage mixture. Cook for another 15 minutes or until eggs set.

Top with bacon and remaining cheese.

Christmas Eve

I started off this fabulous Christmas Eve with a long run.

I wanted to get in 11 but my body had other ideas

so only 8.

I came home to yummy feta and spinach omelet. I am not sure what feta obsession is lately.

But no bacon…apparently someone had finished the bacon.

We have a big day planned with a fun holiday dinner with some friends and my family.

I hope you enjoy your time with family and loved ones.

As my Christmas gift to you I leave you with a yummy copy cat recipe.

Copy Cat Red Lobster Biscuits

makes about a dozen

2 1/2 cups Bisquick

4 tbsp cold butter

1 cup cheddar cheese

3/4 cup milk

1/4 tsp garlic powder

Glaze

3 tbsp butter

1/2 teaspoon garlic powder

3/4 teaspoon dried parsley flakes

Preheat oven to 400 degrees, and grease a cookie sheet.

1. Combine Bisquick with cold butter and mix together with two forks, or a pastry cutter if you are fancy. There should be small butter lumps when you mix everything together.

2. Add the cheese, milk and garlic and mix by hand until combined.

3. Put about 1/4 cup portions of dough onto cookie liner and bake for 13-15 minutes, or the tops are light brown.

4. Melt butter in a separate bowl and add garlic and parsley.

5. When biscuits are done spread butter mixture over the top.

Try not to eat them all.

They are even better on the second day.

The most wonderful time of the year

Today is Rich’s birthday!

Happy happy birthday to my other half and monkey groomer.

My birthday gift to him was allowing him to do his second favorite thing- golf all day.

I am just assuming that it is his second favorite thing- obviously his first would be spending time with me.

So while he golfed all day long- I baked my butt off.

I found a recipe for Jack Daniels cupcakes that I just had to try.

About half way through I realized that I was drunk off the fumes.

Jack Daniel’s cupcakes

2 cups of flour

3/4 cups cocoa powder

2 cups sugar

2 tsp baking soda

1 tsp baking powder

1 tsp salt

1 cup applesauce

1/2 cup jack daniels

1 cup buttermilk

1/2 cup vegetable oil

Preheat oven to 350 degrees.

1. Mix dry ingredients together in a large mixing bowl.

2. In a separate bowl combine applesauce, jack daniel’s, buttermilk, and vegetable oil.

3. Combine dry and wet ingredients and whisk together until smooth.

4. Use a 1/4 cup to spoon mixture into cupcake tin.

5. Bake for 18-20 minutes or until cake bounces back when lightly touched. Let cool completely.

Whisky Ganache

16 ounces good quality dark chocolate chips

3/4 cup heavy whipping cream

2 tbsp unsalted butter- softened

1/4 cup Jack

1. Place dark chocolate chips in a bowl that has a lid.

2. Bring cream to an almost boil, then pour over the chocolate and cover for about 2 minutes. Uncover and stir until smooth.

3. Add butter, jack and mix until smooth. Cool completely.

Whiskey Buttercream

1 lb butter – I died when I saw this…Paula Dean would be proud of me

1 package of white chocolate instant pudding mix

2 cups of the ganache- the stuff you just made…took me a while to figure it out

1/2 cup cocoa powder

1/2 cup heavy cream

1/2 cup powdered sugar

1. In a stand mixture beat butter and pudding mixture about five minutes.

2. Turn off mixture, add ganache, cocoa powder and cream. Beat again for about 5 minutes.

3. Add powdered sugar slowly and more Jack if needed.

I had leftover ganache so I topped the cupcake with ganache and then topped with the buttercream.

My house smells like a bar.

A delicious, delicious bar.

Lazy Sunday

We ran in the local flapjack festival 5k this morning.

I was incredibly bummed by my time.

But I finally just had to accept that I placed in my extremely large age group (18-29 and I am on the tail end of that group). I came in third against a high schooler, and a collegiate runner which I guess is not too bad.

Like any race day I spent the rest of the day in my jammies.

Made some pizza dough.

and used up some sloppy joe leftovers.

Still sloppy.

And still yummy.

Ps Hopefully I will have some race pictures but my mama took them and she is some what technologically impaired. Which is the PC term for it.

Baby it’s cold outside

Not really but that is truly the only Christmas song I can stand.

We got a big ole Christmas tree.

But to be specific it is an efffin’ HUGE tree.

It is pretty big.

We spent the whole day decorating.

Well I spent the whole day watching Rich decorate.

And crock potting a spaghetti squash to replace all the carbs in my life.

Crock pot Spaghetti Squash

1 medium squash- depending on the size of your crock pot, you do not want the sides of the squash to touch the crock pot, so get the best size for you.

1/2 cup water

1. Clean squash, and place in crock pot with 1/2 cup water. Cook on low for 4 to 5 hours or until a fork pierces the skin.

2. Remove from crock pot and let sit until cool, about an hour. Cut in half, I think I cut mine the wrong way, scoop out the seeds and then use a fork the scrape the flesh, also known as yummy goodness, out.

We topped it with some sauce and some cheese.

Now I am ready for Once Upon A Time and Next Iron Chef.
